  • 1 can ackee (or 12 fresh ackee arils)
  • 250g salted codfish
  • 1 medium onion, sliced
  • 2 tomatoes, diced
  • 1 scotch bonnet pepper
  • 3 stalks scallion, chopped
  • 2 tbsp coconut oil
  • 1 tsp black pepper
  • Fresh thyme sprigs

📝 Instructions

  1. 1Soak saltfish overnight or boil for 20 minutes, drain and flake.
  2. 2Heat coconut oil in a large skillet over medium heat.
  3. 3Sauté onions, tomatoes, scotch bonnet, and scallion for 3-4 minutes.
  4. 4Add flaked saltfish and stir for 2 minutes.
  5. 5Gently fold in ackee, being careful not to mash.
