  • โ€ข250g salted codfish
  • โ€ข1 medium onion, sliced
  • โ€ข2 tomatoes, diced
  • โ€ข1 scotch bonnet pepper
  • โ€ข3 stalks scallion, chopped
  • โ€ข2 tbsp coconut oil
  • โ€ข1 tsp black pepper
  • โ€ขFresh thyme sprigs

  1. 1Soak saltfish overnight or boil for 20 minutes, drain and flake.
  2. 2Heat coconut oil in a large skillet over medium heat.
  3. 3Sautรฉ onions, tomatoes, scotch bonnet, and scallion for 3-4 minutes.
  4. 4Add flaked saltfish and stir for 2 minutes.
  5. 5Gently fold in ackee, being careful not to mash.
  6. 6Add thyme and black pepper, cook for 3-5 minutes.
  7. 7Serve with fried dumplings, breadfruit, or hard dough bread.
