- •1 can ackee (or 12 fresh ackee arils)
- •250g salted codfish
- •1 medium onion, sliced
- •2 tomatoes, diced
- •1 scotch bonnet pepper
- •3 stalks scallion, chopped
- •2 tbsp coconut oil
- •1 tsp black pepper
- •Fresh thyme sprigs
📝 Instructions
- 1Soak saltfish overnight or boil for 20 minutes, drain and flake.
- 2Heat coconut oil in a large skillet over medium heat.
- 3Sauté onions, tomatoes, scotch bonnet, and scallion for 3-4 minutes.
- 4Add flaked saltfish and stir for 2 minutes.
- 5Gently fold in ackee, being careful not to mash.
- 6Add thyme and black pepper, cook for 3-5 minutes.
- 7Serve with fried dumplings, breadfruit, or hard dough bread.
