  • 1½ lb ripe Indian plums (Indian jujube), pitted and chopped
  • 1 medium onion, finely chopped
  • ½ cup apple cider vinegar
  • ¾ cup brown sugar
  • 1 tsp grated ginger
  • 1 scotch bonnet pepper, minced (optional)
  • ½ tsp allspice
  • ¼ tsp cinnamon
  • Salt to taste

📝 Instructions

  1. 1Combine vinegar and brown sugar in a saucepan and heat until the sugar dissolves.
  2. 2Add onion, ginger, scotch bonnet, allspice, and cinnamon. Cook 5 minutes.
  3. 3Add the chopped Indian plums and salt.
  4. 4Simmer on low heat for 30–40 minutes, stirring occasionally, until thick and jammy.
  5. 5Cool completely, then transfer to sterilised jars.
  6. 6Serve with curries, grilled meats, or cheese.
