🥘 Ingredients
- •1½ lb ripe Indian plums (Indian jujube), pitted and chopped
- •1 medium onion, finely chopped
- •½ cup apple cider vinegar
- •¾ cup brown sugar
- •1 tsp grated ginger
- •1 scotch bonnet pepper, minced (optional)
- •½ tsp allspice
- •¼ tsp cinnamon
- •Salt to taste
📝 Instructions
- 1Combine vinegar and brown sugar in a saucepan and heat until the sugar dissolves.
- 2Add onion, ginger, scotch bonnet, allspice, and cinnamon. Cook 5 minutes.
- 3Add the chopped Indian plums and salt.
- 4Simmer on low heat for 30–40 minutes, stirring occasionally, until thick and jammy.
- 5Cool completely, then transfer to sterilised jars.
- 6Serve with curries, grilled meats, or cheese.
