Guava Cheese (Guava Paste)
Traditional Caribbean guava paste (guava cheese) โ a sweet, dense confection perfect with cream cheese and crackers.

๐ฅ Ingredients
- โข2 lbs ripe guava
- โข2 cups sugar
- โขJuice of 1 lime
- โขยผ cup water
- โขPinch of cinnamon
๐ Instructions
- 1Wash guavas, cut into quarters, and boil in water until very soft.
- 2Push through a sieve to remove seeds, collecting smooth pulp.
- 3Combine pulp, sugar, lime juice, and cinnamon in a heavy pot.
- 4Cook over medium-low heat, stirring constantly for 40-50 minutes.
- 5The mixture will thicken and pull away from the sides of the pot.
- 6Pour into a greased pan and let cool completely.
- 7Cut into squares. Serve with cheese or crackers.
