- •2 cans young green jackfruit in brine, drained and shredded (or 3 cups fresh)
- •3 tbsp jerk seasoning
- •2 tbsp soy sauce or tamari
- •2 tbsp coconut oil
- •1 onion, sliced
- •3 cloves garlic, minced
- •1 tbsp lime juice
- •Salt to taste
📝 Instructions
- 1Rinse the jackfruit and squeeze out excess brine. Shred it into pulled-pork-like strands.
- 2Heat coconut oil in a skillet. Sauté onion and garlic until soft.
- 3Add the jackfruit, jerk seasoning, and soy sauce. Cook 8–10 minutes, stirring, until browned and crisp at the edges.
- 4Stir in lime juice and season with salt.
- 5Serve in buns, over rice and peas, or with roasted vegetables.
