  • 2 cans young green jackfruit in brine, drained and shredded (or 3 cups fresh)
  • 3 tbsp jerk seasoning
  • 2 tbsp soy sauce or tamari
  • 2 tbsp coconut oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp lime juice
  • Salt to taste

  1. 1Rinse the jackfruit and squeeze out excess brine. Shred it into pulled-pork-like strands.
  2. 2Heat coconut oil in a skillet. Sauté onion and garlic until soft.
  3. 3Add the jackfruit, jerk seasoning, and soy sauce. Cook 8–10 minutes, stirring, until browned and crisp at the edges.
  4. 4Stir in lime juice and season with salt.
