  • 3 ripe mangoes, peeled and diced
  • 1 medium onion, finely chopped
  • ½ cup apple cider vinegar
  • ½ cup brown sugar
  • 1 scotch bonnet pepper, minced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • ½ tsp allspice
  • ¼ tsp cinnamon
  • Salt to taste

  1. 1Combine vinegar and brown sugar in a heavy saucepan, stir over medium heat until dissolved.
  2. 2Add onion, garlic, ginger, and scotch bonnet. Cook for 5 minutes.
