Tropical Mango Chutney

- โข3 ripe mangoes, peeled and diced
- โข1 medium onion, finely chopped
- โขยฝ cup apple cider vinegar
- โขยฝ cup brown sugar
- โข1 scotch bonnet pepper, minced
- โข2 cloves garlic, minced
- โข1 tbsp fresh ginger, grated
- โขยฝ tsp allspice
- โขยผ tsp cinnamon
- โขSalt to taste
๐ Instructions
- 1Combine vinegar and brown sugar in a heavy saucepan, stir over medium heat until dissolved.
- 2Add onion, garlic, ginger, and scotch bonnet. Cook for 5 minutes.
- 3Add diced mango, allspice, cinnamon, and salt.
- 4Simmer on low heat for 30-40 minutes, stirring occasionally until thickened.
- 5The chutney should be jammy but still have some fruit chunks.
- 6Let cool completely before transferring to sterilized jars.
- 7Serve with curried dishes, grilled meats, or as a dip with crackers.
