- โข1 lb tamarind pulp (seeds removed)

- โขยฝ tsp cayenne pepper (optional)

- 1Remove tamarind from shells and pull out seeds and stringy fibers.
- 2Mix pulp with brown sugar, salt, and cayenne pepper in a bowl.
- 3Knead the mixture until sugar is fully incorporated.
- 4Roll into 1-inch balls between your palms.
- 5Roll each ball in granulated sugar to coat.
- 6Let set for 30 minutes before serving.
- 7Store in an airtight container for up to 2 weeks.
