Jamaican Banana Porridge

- โข2 ripe bananas, mashed
- โข2 cups water
- โข1 cup coconut milk
- โขยฝ cup cornmeal
- โขยผ tsp ground nutmeg
- โขยผ tsp ground cinnamon
- โข1 tsp vanilla extract
- โข1โ2 tbsp brown sugar (to taste)
- โขPinch of salt
๐ Instructions
- 1In a saucepan, whisk cornmeal into water over medium heat to prevent lumps.
- 2Cook for 6โ8 minutes, stirring, until it begins to thicken.
- 3Add coconut milk, mashed bananas, salt, nutmeg, and cinnamon. Stir well.
- 4Simmer on low for 5โ7 minutes until creamy.
- 5Stir in vanilla and sweeten to taste.
- 6Serve warm.
