  • 1 can ackee (or 12 fresh ackee arils)
  • 1 cup coconut milk
  • ½ cup rolled oats
  • 1 tbsp honey or brown sugar (to taste)
  • ½ tsp vanilla extract

  • ¼ tsp ground cinnamon
  • Pinch of salt
  • 1 tbsp lime juice
  • Optional: 1 ripe banana for extra sweetness

  1. 1If using saltfree canned ackee: drain and rinse gently. If using fresh ackee: ensure it opened naturally, remove seeds and red membrane, then boil arils for 5–10 minutes and drain.
  2. 2In a small saucepan, bring coconut milk to a gentle simmer. Stir in the rolled oats and cook on low for 6–8 minutes until soft.
  3. 3Add ackee to the pot and warm for 2 minutes.
  4. 4Transfer mixture to a blender. Add honey (or brown sugar), vanilla, nutmeg, cinnamon, salt, and lime juice.
  5. 5Blend until smooth and spreadable. For a thicker spread, blend longer; for a looser porridge texture, add a splash of water.
