Caribbean Coconut Drops
Classic Jamaican coconut drops with ginger โ a chewy, sweet, and spicy candy made with fresh coconut and brown sugar.

- โข2 cups grated dry coconut
- โข2 cups brown sugar
- โข1 tbsp fresh ginger, grated
- โขยฝ cup water
- โข1 tsp vanilla extract
- โขPinch of salt
๐ Instructions
- 1Combine brown sugar and water in a heavy pot over medium heat.
- 2Stir until sugar dissolves and mixture begins to bubble.
- 3Add grated coconut, ginger, vanilla, and salt.
- 4Stir continuously as the mixture thickens, about 15-20 minutes.
- 5The mixture is ready when it begins to pull away from the pot and a drop holds its shape on a cold surface.
- 6Drop spoonfuls onto a greased baking sheet or banana leaf.
- 7Let cool and harden completely before eating. Store in an airtight container.
