  1. 1Combine brown sugar and water in a heavy pot over medium heat.
  2. 2Stir until sugar dissolves and mixture begins to bubble.
  3. 3Add grated coconut, ginger, vanilla, and salt.
  4. 4Stir continuously as the mixture thickens, about 15-20 minutes.
  5. 5The mixture is ready when it begins to pull away from the pot and a drop holds its shape on a cold surface.
  6. 6Drop spoonfuls onto a greased baking sheet or banana leaf.
  7. 7Let cool and harden completely before eating. Store in an airtight container.
